  • Wheat pasta

Preparations

Ingredients 

  • Penne Pasta
  • Tbsp olive oil
  • Small onion
  • Cloves garlic
  • Tomato 
  • Tomato paste
  • Greek yogurt 
  • Big handful spinach
  • Hard cheese, grated
  • Oregano, Dried
  • Basil, Dried
  • Red Pepper Flakes
  • Salt
  • Pepper, Ground

Preparation

  • Dice the onion, grate or cut the garlic, and chop the tomatoes (if not using a can).
  • When the water is boiling, put the pasta (add salt and a small amount of oil for taste).
  • In a large pot over medium heat, heat the oil, add the onion and garlic, and cook for 5 minutes, or until transparent.
  • Mix in the tomatoes. If you use fresh tomatoes, the sauce will become runny. Letting it sit for a day will you achieve the desired creamy texture.
  • Mix in the spinach.
  • Combine the oregano, basil, red pepper flakes, salt, and pepper in a mixing bowl.
  • Mix in the tomato paste and Greek yogurt. Stir until each is completely dissolved in the sauce.
  • Now stir in the hard cheese.
  • Drain and toss with the pasta. Reduce the heat to a low simmer.
  • For 1 minute, stirring occasionally. Taste and season with salt and pepper to taste. Enjoy it with your friends and family.
